What can you tell us about your presentation at the Virtual Exhibition?

Proteins are under revolutionary changes at the moment, and this doesn’t stop with animal protein replacement. We are seeing a host of new ingredients created that replace traditional ones with protein-based products.

Design of novel proteins and addressing different industrial needs is currently possible due to the latest computing developments; these laboratory designs need to come to market and new fabrication methods are needed. Thankfully, biotech is on the task of bringing new fermentation technologies to mass production and making feasible the production of these new ingredients at cost-effective targets.

While the initial phase of alternative protein was based on pulses and protein isolation, the next generation will be based on the bio-synthesis of these novel ingredients; which will transform the market and allow a leaner use of natural resources.

As an accelerator for European food startups, can you describe what Eatable Adventures does?

We empower the most talented food startups to create a solid impact on people’s food habits. We achieve this by developing an ecosystem where innovation can thrive and startups can connect with corporates and investors. We support them by providing vision, expertise, and methodology to generate fast and sustainable growth.

We help startups in designing their product-market fit strategy, developing their MVP, and establishing the right contacts to launch their solution to a specific market, during the six months hands-on program with a high-demanding working scheme.

Spain Foodtech is our latest accelerator program launched together with ICEX and CNTA.

What kinds of companies are you working with now in the plant-based foods category?

We have a wide range of companies working with us because we have a deep insight into the end-to-end value chain for the Agri-Food Industry: from supply to demand sides.

We are working with traditional manufacturers willing to enter the plant-based business but also with completely vertical plant-based brands.

We are also helping foodservice, retailers, and beverage corporations to shape their strategy and tune their organizations to a new set of activities showing them the huge potentials of being plant-based in food productions but also in packaging.

What are the top plant-based and consumer trends you see shaping the future of products coming to market in the next 5 years?

It’s almost impossible to forecast 5 years from now in this extremely active market; we believe plant-based dairy is ready for a second act, moving beyond single ingredient products to blended varieties and functional products. Meat replacements are equally moving into super clean-label formulations that will bring good innovation to the market.

Primarily we will see Funghi, the third element as we called internally, coming out very strong. We are seeing amazing developments in this field, with fermentation times speeding up and creating biomass really fast. The variety of products we will see steaming from this ingredient area will be amazing.

What’s your best advice for early-stage brands entering the plant-based market?

Emerging brands shall have a unique market position and a differential product; speeding up distribution and defining a strong fit to the market product is the key to succeed in this highly competitive market.


About the Speaker 

As the founder of Eatable Adventures back in 2015, José Luis pioneered the nascent Food Entrepreneurship movement in Europe; which resulted in an emerging ecosystem of new companies that are improving the way we eat. He also led the launch of Gastroemprendedores, the largest global network of Food & Beverages Startup founders and entrepreneurs, reaching well over 25.000 individuals; similarly launched Food Business Angels, the first global network of early-stage investors in early-stage phases of F&B startups.

Prior to his involvement in the Food Space, he has been active in the innovation and new technologies industry for almost 30 years, working with such international corporations as Cisco, Oracle, BBVA, and Unisys as EMEA and LATAM new markets and emerging sectors development business director.

Educated as a Computing Engineer at Extremadura University, José Luis completed his tech studies with business and culinary studies at Stanford University —Graduate School of Business Executive Program – Le Cordon Bleu at Francisco de Vitoria University in Madrid — Diplôme de Cuisine – Reims Champagne- Ardennes University – Diplôme Universitaire DUGGAT – and Haas Business School Berkeley University – Venture Capital Executive Program.
