Alejandro Marangoni, professor and Canada Research Chair Food, Health and Aging at the University of Guelph, will be speaking at our Plant-Based Foods & Proteins Summit in Chicago on the megatrends that will shape our food supply and the types of foods we consume. From sustainability, health, ethics and religion, the field is very complex.
His talk May 12 will focus on fats and oils, particularly the fact that coconut oil is the only current option that fulfills ethical and technological requirements. New developments include oleogels and glycerolysis products and emulsions; there are options but these need to be optimized and scaled up. Recommendations will be made.
Marangoni was appointed to the Order of Canada in 2021 for his work in organic chemistry, specifically trans and saturated fats.
